Daarom maakte mijn hart een huppeltje toen Mariana, mijn nieuwe favoriete Portugese wijnmaakster, mij haar houtgelagerde wijn liet proeven. Of ik de vergelijking met de Bourgogne mag maken, waarschijnlijk niet. Maar omdat boze wijnboomers blij maken toch een verloren wedstrijd is, doe ik het lekker toch. In je glas heb je namelijk roos, vanille, tropisch fruit, citrus, brioche, een lichte honing toets en een hele lange finish. Say no more, toch? Mariana krijgt deze complexiteit in de wijn ten eerste natuurlijk door de kwaliteit druiven van een field blend van oude stokken en veel concentratie. Daarnaast is er geen schilcontact en laat ze de wijn soms wel een jaar (!) fermenteren in een groot vat van Oostenrijks hout. Omdat de temperatuur in de kelders van Ethos in de winter zo koud wordt, gaat de vergisting ontzettend langzaam en kan het tot de volgende zomer duren tot deze compleet is. Wijn waar tijd voor is genomen en dus een wijn waar jij ook absoluut een keertje de tijd voor moet nemen.

We have watched her sit there and chew with a side of her mouth for an hour or more, trying to make some kind of indention or tear in it and it just never happened. She loves to chew this thing, chase this thing, sleep with this thing. I most certainly recommend this ball. If it is I'ah proof then it is most certainly, 100% a durable ball and worth every penny
