Enjoy with smoked trout on untoasted black bread, or haggis, no tatties - unless they aren't too buttery - with a homemade tomato sauce or chutney.

Production:  Wild fermented with as much whole berry as possible in small open vats at our mountain winery in Whitlands. Twice daily gentle hand plunges throughout its maceration time with fractions pressed off over the course of 18 days. The ruby rosé portions and the more savoury longer skin contact portions were blended together post-ferment to make a delightfully vibrant light red. Aged in old French oak for 6 months and then bottled unfined and unfiltered with a small addition of sulphur.
