Each Yoshihiro Honyaki knife is meticulously handcrafted by our master artisans, some of whom possess over 50 years of experience in this ancient craft. Honyaki knives are forged from White Steel #2, achieving a remarkable hardness of 65 on the Rockwell scale. The steel is heated in hearths that reach thousands of degrees, then quenched in cool water to enhance its hardness and performance. The result is a brilliantly polished mirror finish that showcases the knife's superior quality while blending aesthetics with functionality.
Complementing the blade, our Yoshihiro Honyaki knives feature a premium handcrafted Ebony wood handle, affixed with a Water Buffalo horn bolster for added elegance and durability.
