紅糟豆腐乳跟紅麴豆腐乳有甚麼不同呢?
紅糟產生是紅麴加上糯米與白麴釀造後，榨去酒液過篩後剩下的酒糟，
生紅糟擁有天然的紅色光澤和獨特酒香及微酸口感，有很多優良的胺基酸，
而且依然帶有擁有活耀的菌種，可以輔助發酵，是一種天然的食品添加劑
我們的豆腐乳製作方式不會很「鹹」
跟未出酒的紅麴製作的紅麴豆腐乳的味道完全不一樣
並不是靠鹽巴來提味，而是靠紅糟
由豆粕為主要發酵選手~紅糟輔助發酵，
讓豆腐乳帶有紅糟香氣及淡淡的酒香
會加適量的鹽巴及糖，並以米酒填充密封，讓豆粕及紅糟的好菌持續發酵。
經過4~6個月即可完成色澤漂亮、味道也很棒的『紅糟豆腐乳』
