- Gemäß der Tradition der neapolitanischen Mühle besteht das Mehl immer nur aus Weizen. Aber das Geheimnis des neuen Mehls ist die Kombination zwischen der neapolitanischen und der römischen Schule. Criscito, der alte Sauerteig, den die Neapolitaner bis vor einigen Jahrzehnten verwendeten, ist in diesem neuen 0-Weichweizenmehl enthalten
- Ein hochleistungsfähiges Mehl, dessen Hauptmerkmale die natürliche Beschaffenheit und die Auswahl der Körner sind (es handelt sich nicht um eine Mischung von Mehlen, die beim Sieben „herauskommen“).
